Healthy Treats

Is it just me or does January just stink when it comes to getting back to eating healthy? I feel like I am constantly craving sugar and eating way too many sweets. It is rough getting back on that healthy train. Here are some healthier sweet treats that help me kick that sugar craving.

Peanut Butter Rice-Krispies 
Ingredients
· 4 cups rice Krispies (I like to use Brown Rice Crips )
· ½ cup honey
· ½ cup peanut butter
Instructions:
· Place 4 cups of Rice Krispies in a mixing bowl and set aside
· Prepare a baking dish (9X11) and line with parchment paper- set aside
· Bring honey to a boil for 1 minute- constantly stirring the honey
· Remove honey from heat and stir in peanut butter
· You will have a creamy mixture, stir over Rice Krispies until well mixed.
· Spread mixture into baking dish and let sit for 1 hour
· Cut into squares and enjoy!




Snickerdoodle Bites
Ingredients:
· ½ cup all-natural almond butter
· ½ cup pure maple syrup
· ¼ tsp vanilla extract
· ¼ tsp butter extract, optional
· ¾ cup Kodiak Power Cakes mix
· 1 serving vanilla protein powder
· 1 Tbs. Cinnamon
· ¼ tsp. sea salt
Instructions:
In a large bowl, combine dry ingredients, set aside. In a separate bowl mix together almond butter, maple syrup and the extracts. Once combined, add to the dry mixture and mix well.
Using a cookie scoop, scoop into balls. Store in the fridge or freezer.

Dark Chocolate Peanut Butter Banana Bites
Ingredients:
· 2 medium bananas
· ¼ cup creamy but butter of your choice
· ¾ cup baking chocolate
· 1 ½ tablespoon coconut oil
Instructions:
1. Cover a baking sheet with parchment paper. Slice each banana into thin slices and arrange half the pieces on the baking sheet.
2. Spread peanut butter onto each banana slice, then cover with another banana slice. Place in freezer for about 30 minutes or until frozen.
3. Place the coconut oil in a microwave safe bowl and microwave until melted. Stir in the chocolate and continue to microwave until smooth. (Bowl will be hot, be careful!)
4. Use a fork or spoon to cover each banana bite in chocolate, then place back on the sheet. Freeze for 1 hour.
5. Store in freezer and thaw for a few minutes before eating!



Apple, Peanut Butter, & Chocolate
· Slice up an apple
· Place two tablespoons peanut butter in microwave bowl or cup and microwave for 30 seconds.
· Place melted peanut butter on top of chopped apples
· Sprinkle dark chocolate chips over mixture

When You Find Yourself in a Failed Workout

I've talked about the marathon a lot before. It is a race that consists of thousands of hours training for, hundreds of miles ran, countless hours of strength training, hill training, speed work, tempo runs, and the list could go on and on. I would like to talk about finding yourself in those rough training days. Whether you are training for a marathon, half marathon, triathlon, or any endurance competition.
